In my college dorm days, the food offered in the campus cafeteria was the very close to the level of disgusting that has historically caused armies to revolt. But about twice a semester they would do something special to break up the monotony of mystery meat and chocolate milk. Steak night was a fave – I tried to find as many vegans as possible to secure their single steak ticket that we were each offered. But another fave was banana split day. Going through the line I noticed that the bananas had already been peeled and were soaking in a bucket of liquid. I asked the lady serving the ice cream about it and she said it was pineapple juice. It kept the peeled bananas from turning brown during the service. I point this out to show that at least #5 on this article’s list is accurate.

What the article leaves out is that as the bananas finally become hopeless to save, they are just right for baking into banana bread. That is a great, final save.

In fact, most banana bread recipes I’ve seen specify ‘ripe bananas’. The food at Yale was at least as good as what I got in the Navy, so I had no reason to complain. Nowadays, of course, it’s all vegan-fair-trade-organic sawdust.
