If you’ve ever eaten Irish cooking, you’ll know why. (There’s a reason you see a lot of Irish bars and no Irish restaurants.)

    Waiting in the burger line at a food court on St. Patty’s Day and the manager (a friend) came over and asked if I was Irish. Yeah. So why aren’t you in today’s special line, with corned beef and cabbage and soda bread?

    Easy. My family left there so we could get a cheeseburger. Or pizza, or tacos, or a steak. People didn’t eat “Irish” food because it was good; they ate it because it’s all they had.

    There is one notable exception: Potatoes. There are no bad ways to cook potatoes. Boiled, fried, baked, mashed, scalloped, stuffed – they’re all good!
