    Of course, you can still find lard in the markets that cater to Mexican cooking.

    Or you could go to a high-end butcher, who will be happy to sell you any part of the pig you’re willing to pay for.

    I use rendered bacon fat from my breakfast in the morning. Got a lot of it in the freezer.

    Sinclair hoped his book would push people to adopt socialism. It turned out they cared a lot more for their food than for their factory workers. Even so, more government control – in this case via the FDA – helped to inch this country towards socialism and made candidates like AOC seem viable.

    I too render my own pork lard from fat back. Toss it in a crock pot and melt it down, then pour it through a cheese cloth into a mason jar. Absolutely the most flavorful way to cook nearly anything but home made french fries in a skillet… OMG.
