The Science Behind Non-Newtonian Noodles

Traditionally, elastic fei chang fen noodles are made of sweet-potato starch reserved in a steaming-hot broth with pig intestines. The resulting noodle soup is then garnished with bean sprouts, scallions, peanuts, chili oil, and vinegar.

It is the unique preparation, however, by which the street vendor creates his noodles that caught our attention. By combining starch and liquid, he creates a non-Newtonian fluid: a liquid that does not flow with constant viscosity but with a viscosity that changes in response to shear forces, which are forces that push in opposite directions along two distinct parallel lines. Simply put, non-Newtonian fluids can behave as both a liquid and solid. When you apply shear forces to non-Newtonian fluids, you’re met with resistance—try punching such mixtures, and you might come away with a bruise or two. In contrast, Newtonian fluids (like water) have a relatively constant viscosity, despite shear forces and flow rates, which allow them to flow in predictable ways.

Cartoons suggest that rabbits can happily survive on a diet of carrots alone. But in the wild, rabbits don’t eat root vegetables—they’d much rather munch on greens like weeds, grasses, and clovers. That doesn’t mean you can’t give your pet some carrots as a snack from time to time, but don’t overdo it: Carrots are high in sugar and contribute to tooth decay in 11 percent of pet bunnies.

US and UK Scientists Win Million-Dollar Prize for Gene Therapy to Cure Childhood Blindness

Babies born with LCA have poor eyesight and are extra sensitive to light. In most cases, people with the “rare genetic eye disorder” go completely blind by age 40, according to a press release from the University of Pennsylvania School of Medicine.

LCA is caused by a mutated gene. The scientists figured out a way to transfer a corrected version of the gene to patients via innocuous viruses. They received the U.S. Food and Drug Administration’s first approval of a gene therapy for a congenital disorder in December 2017, according to the press release.

This Media Startup Is Beating the Competition With a Newsroom Run by Robots

News of Kim Jong-Nam’s death was quickly picked up in Japan not by one of the country’s giant media conglomerates, but by a small startup. JX Press Corp., a news technology venture founded in 2008 by Katsuhiro Yoneshige while he was still a freshman in college, reported the incident more than half an hour faster than the big names, according to one observer. It did so even though it has no journalists, let alone any international bureaus.

“NewsDigest got the scoop at 19:52, and TV stations had it about 20:30,” sociologist Noritoshi Furuichi wrote on Twitter after reports of Kim’s death. “Television has succumbed to being a slow media.”

JX Press’s secret, it turns out, is a combination of social media and artificial intelligence. Yoneshige and his team have developed a tool, using machine learning, for finding breaking news in social media posts and writing it up as news reports. Essentially, it’s a newsroom staffed by engineers.

And, I suspect, it didn’t have the proglodyte slant so pervasive at major news outlets.

The brain cell, with its unique gene expressions, distinctive shape and diverse connections with other neurons, has not been described before and, what’s more, it isn’t present in neuroscientists’ favorite subject: mice.

Taken twice a day, the drug is an appetite suppressant that works by stimulating brain chemicals to induce a feeling of fullness.

Appetite suppressants only work to lose weight for people who only eat when they are actually hungry. Most people eat three times a day out of habit, and eat beyond the full point because they were trained by their parents to eat everything in front of them. (Remember the ‘Clean Plate Club’? I do.)

The key to weight control is to stop eating when you stop being hungry, no matter how much food is still uneaten. Yes, you wind up wasting food at first, but you soon adjust your portions to your appetite.

Scientists Are Working on a Device That Could One Day Harvest Up to 10 Gallons of Drinking Water Per Hour From Thin Air

Wong and his team set out to “miniaturize,” the process of harvesting atmospheric water using electrospun polymers.

Electrospinning can produce polymers as small as a few tens of nanometers across, which means that a huge surface area can be packed into a really small space. That makes the nanoscale-polymers super-efficient at collecting water, even in arid environments. The device, which could be powered by a lithium-ion battery, would also be able to filter water because the surface of the material would slough off any microbes or bacteria present in the water vapor.

While that may seem complicated, Wong said it’s not much different than how people in the Andes, and Namib beetles collect water — it’s just at a much smaller scale.
