I used to think that ‘pasteurized’ meant the cow was kept outdoors. Shows how much I know.

    People drank raw mild for many centuries before Pasteurization was invented. However, I do see the point that getting milk from a single cow is quite different than blending from hundreds (thousands?) and hoping none are sick.

    An additional point: A farmer milks twice per day and all the milk goes into a large tank with a refridgeration system. If the farmer is going to use the milk, he will get his from the first milking after a truck has emptied the tank. After that first milking, warm milk is added to the refridgerated milk. The taste degrades significantly. In some cases, several days worth of milk will accumulate before the tank is emptied.

    (One of the many now fairly useless things I learned in my youth.)
