I noticed one of the signs on Bluebird’s web site was for Lox Stocks n’Bagels. It’s actually a franchise in NY. One side of the place sells bagels and the other side sells soups and such (i.e., “Stocks”). Sounds like a weird combo, but the way it works is pretty cool. The bagel side opens in the morning for breakfast. The other side opens at lunch so they can handle the lunch rush. Then the bagel side closes and the other side remains open for supper. That way the restaurant can be open all day and properly staffed.
Most people would not be impressed, I guess, but I love to see what happens when people come up with new ideas that don’t suck.

Were I ever to be in New York (which I avoid) I would like to try it.
