Meanwhile, in Houston – the most diverse city in the USA – this Portland situation is considered to be absurd.
Some years back, a new Mexican restaurant opened near my house. We went, and it was pretty good, and after the meal the waiter gave me his business card on which he had written, “Good for one free meal with one purchased”. I thanked him, then looked at the card again and asked, “What kind of a Mexican name is Abdul?” He proceded to tell me that his family was, in fact, Pakistani and that they decided to start a business and Mexican food required the lowest overhead. The restaurant grew into a chain, then bought another chain, then sold out and the family made a lot of money. Point was that nobody gave a crap who ran the place as long as the tacos were good and the marguaritas were cold.
